Ingredients:
Legs or
Thighs or
Breasts or
Wings
Chili Powder
Paprika
Black Pepper
Sea Salt
Ground Cumin
Onion Powder
Garlic Powder
Oregano Flakes
Cilantro Flakes
Large Plastic Container
Charcoal Wood Chunks
BBQ Sauce Ingredients:
Honey BBQ Sauce
Red Wine Vinegar
Chili Powder
Paprika
Lemon Pepper Marinade
Orange Juice
Olive Oil
Directions:
On both sides of the chicken you prefer, add a heaping amount of Chili Powder, Paprika and Black Pepper and coat them with your hands so the chicken looks dark red. In the Large Plastic Container, add the Sea Salt, Ground Cumin, Onion Powder, Garlic Powder, Oregano and Cilantro Flakes and add water half way. The water will mix the ingredients together. Slowly add in the chicken of your choose. The Chili Powder and Paprika will stick to the chicken even though exposed to the water. Do not worry about the chicken being too salty from the other ingredients. It will not be too salty. The mixed water will enhance the flavor and keep the chicken moist and will not dry out. Cover the container and place in the fridge for 24 hours.
Combine in a large mixing bowl, all the BBQ Sauce ingredients. Mix until dissolved into a new batch of thick red sauce. Place in the fridge to cool down.
Add Charcoal Wood Chunks to the grill and light on fire. The Wood Chunks last longer than actual charcoal. When the grill is nice and hot and the wood chunks have been moved all over the grill for even heating, take the container out of the fridge. In the sink, dump out the water leaving the chicken inside. Take the container to the grill and place the chicken on the grill. Depending on how hot the grill is and how much wood chunks there are, you may have to watch the chicken on the grill from time to time. After both sides have been cooked, take the chicken and add it to the bbq mixture. Place the chicken back on the grill and flip to brown the other side. After it is finished, add the chicken back into the bbq mixture and serve when ready.
